Good Crunch

This is the best granola ever. Thanks, Sue Cassels!

1 1/2 cups rolled oats (not instant)
1/2 cup whole wheat pastry flour (or oat flour)
1/2 cup nuts, chopped
1/3 cup maple syrup (or 1/6 cup maple syrup blended with 1/6 cup dates)
1/3 cup neutral oil like avocado or refined olive
1 tsp. vanilla
1 tsp. cinnamon
1 pinch of salt
1 egg white (optional, for Larger Clumps)
1 cup raisins or dried apples or...

Mix all ingredients except for raisins in a bowl until well coated. Spread on a lightly greased cookie sheet. Bake at 325 for 1/2 to 1 hour. Stir 2 or 3 times to bake evenly (or flip once, for big chunks)... When it first comes out, the granola is still soft, but is slightly browned. Don't overbake! Allow to cool, then mix in the raisins. Store in a sealed container.

Variations:
Add shredded coconut with the nuts.
Add 1 - 2 cups more chopped dried fruit to cool granola.
Serve over plain or vanilla yogurt
Add to cookies or muffins
