This fabulous recipe is from Megan over at Eatbeautiful.net, one of my favorite recipe-creators of all time.
Sauce:
3 T. honey
1.5 T. lime juice
1.5 T. soy saucepan
1/4 tsp. Salt
1 lb. Chicken thighs, boneless and skinless
1 T. avocado oil
¼ tsp. each dried ginger, ground cumin, ground black pepper, onion powder, garlic powder/granules
4 oz. Sliced mushrooms
Other thinly sliced vegetables, if you wish (no more than about a cup or so)
Combined sauce ingredients in a small cup.
Heat a wide frying pan over medium heat, and add the oil. Lay the chicken pieces in a single layer and brown them on one side for 5-6 minutes. Meanwhile, sprinkle all the powdered spices on top.
Flip the chicken and cook 4 more minutes on the second side; while the chicken cooks, nestle the vegetables around the chicken.
Add the sauce, and cook, turning occasionally, for 10 minutes, until the sauce is thickened and wonderful.
Serve over rice or noodles.
