Maple Barbecue Sauce

2 tsp. canola oil
1 small onion, finely chopped
¾ cup sodium-free ketchup
½ c. Southern Comfort liqueur or apple juice
¼ cup maple syrup
¾ cup cider vinegar
1 tbsp. Worcestershire sauce or reduced-sodium soy sauce
1 ½ tsp. hot sauce, such as Tabasco
5 cloves garlic, minced
Salt, to taste

Heat oil in a medium saucepan over medium-low heat. Add onion and cook, sitrring often, until softened but not browned, 3-5 minutes. Add remaining ingredients and bring to a simmer. Reduce heat to low and simmer, uncovered, stirring occasionally, until thickened, about 30 minutes. Let cool for about 10 minutes. Transfer to a blender until smooth [or don't blend--it's still good].

Makes 1 ¼ cups
