¾ cup canola oil
¾ cup maple syrup
¼ cup water
1 tbsp. nut butter (I used almond)
1 tsp. vanilla extract
¾ cup whole wheat pastry flour
2 tbsp. nutritional yeast flakes
1 tsp. ground cinnamon
2 ¾ cups rolled oats
½ cup raisins (see note)
½ cup chopped pecans
2/3-1 cup chocolate chips
Preheat oven to 350f. Line baking sheets with parchment paper (preferable) or generously grease baking sheets. Combine oil, syrup, water, nut butter, and vanilla in food processor fitted with steel blade or in mixing bowl and blend well.
In separate bowl combine flour, yeast flakes, cinnamon, and salt. Add to oil mixture and blend just until dry ingredients are moistened.
Transfer to large mixing bowl and stir in oats, raisins, pecans, and chocolate chips. Drop by rounded tablespoonfuls onto prepared baking sheets, spacing 2 inches apart. Bake until golden, about 15 to 17 minutes. Transfer to racks to cool.
Note: If raisins are very dry, soak 15 minutes in required liquid and vanilla. Drain off liquid and use in recipe.
