A Tasty Sauce for Just About Anything

--Any leftover juices, fat, and vegetables from chicken roasting (add some more ghee if there isn't at least 1/4 c. fat)--1/2-1.5 c. total
--1 large shallot or small onion, minced
--about 1/4 c. vinegar or sherry or wine
--salt and pepper to taste

Heat the leftover chicken fat and juices, and add the shallot. Stir-fry for thirty seconds, and then add the vinegar, and salt and pepper to taste. Let cook for ten minutes or so, to meld the flavors.

Delicious over fish, or to sauce greens or a stir fry.
