Barbecue Spare Ribs

My first time having ribs! These were really, really tasty. This recipe is adapted from "Barbecue-Style Pork Ribs" in _The Grassfed Gourmet_, by Shannon Hayes.

Spice rub:
1/2 cup chili powder (mild)
2 tbsp. paprika
1 tbsp. fresh ground black pepper
1 tbsp. salt

about 3 pounds pork spare ribs

about 3/4 cup barbecue sauce http://www.lifeisapalindrome.com/recipes/barbecue-sauce-fruit-sweetened

The night before, thoroughly coat the ribs with the spice rub (there will be extra that falls off, but just make sure every surface is well-covered with spices). Cover with plastic wrap, and let sit overnight in the fridge.

Next day, preheat oven to 200f, and bring the ribs to room temperature.

Gently transfer the ribs to a shallow baking pan, and put the pan in the middle of the oven.

Roast the ribs for about 3.5 to 4 hours, until tender. Coat them generously with barbecue sauce, and cook 30 minutes longer.

Serve with extra sauce, and enjoy!
